stamp-monitor: track the rename to bee-manager

The image moves to ghcr.io/ffaerber/bee-manager. The service key, volume
and secret keep their old names: the volume holds the SQLite database and
the secret holds the admin token, so renaming them to match a product name
would detach state for no gain.
